Summer is in full swing and sunshine goes hand-in-hand with delicious, easy-to-make recipes perfect for your next backyard meal.
Deviled Eggs with Pappy’s Gourmet Zucchini Relish
Ingredients:
12 hard boiled eggs
1/3 c mayo
3 tsp dijon mustard
2 tbs Pappy's Gourmet Zucchini Relish
salt and pepper to taste
chopped fresh herbs (parsley, dill, chives)
paprika for garnish
Directions:
Slice eggs in half and scoop out yolk into a small mixing bowl. Add mayo, mustard, relish and salt & pepper. Mix ingredients together while mashing the yolks. Spoon the yolk mixture into the empty eggs or use a piping bag to pipe the mixture into the eggs. Sprinkle with paprika and herbs for garnish. Serve chilled.

Brian's Mackerel Appetizer
Ingredients:
Triscuit Original Crackers
King Oscar Mediterranean Style Mackerel
Stonewall Kitchen Bourbon Molasses Mustard
Directions:
Spread mustard on a cracker and top with Mackerel. Serve on a Nora Fleming platter with summertime mini.
JoJo’s Mac & Cheese
Ingredients:
2 c macaroni
4 tsp butter
3/4 c bread crumbs
4 tsp chopped onion
2 tbs butter
1 tbs flour
1/4 tsp dry mustard
3/4 tsp salt
dash of pepper
2 c milk
2 c shredded cheddar cheese
Directions:
Cook macaroni, according to directions, and drain. In a double boiler, melt 4 tsp butter, toss in bread crumbs, stir, and set aside. Combine onion, butter, flour, mustar, salt & pepper in a saucepan. To this, stir in milk and cook, stirring until smooth. It will be thin. Add 1-1/2 c cheese. Sir until melted. In a 1-1/2 qt. casserole dish, place macaroni. Pour on cheese sauce & sprinkle with remaining cheese & crumbs. Bake at 400 deg for 20 minutes. Serve in Mudpie’s Circa Mac ‘n’ Cheese server set.
Whit’s Smoked Meatloaf
Ingredients:
2 lbs 85/15 ground beef
1 pkg Wind & Willow Bacon Stuffed Mushroom Cheeseball mix
2 eggs (beaten)
3/4 c ketchup or BBQ sauce
3/4 c bread crumbs
Directions:
In a large bowl, mix all ingredients together. Form into a loaf shape and place in a bread loaf pan. Bake in oven at 350 deg for 30 min. Flip meatloaf out of pan directly onto the grill of a smoker and smoke at 200 degrees for 3-4 hours.
